Notes The research, entitled (A Historical Study of the Food Industries in the Ottoman Era in Damascus and its Countryside, “Oil and Molasses Presses as a Model for Study”), dealt with oil and molasses presses in the Ottoman era in terms of the equipment these presses contained, in addition to the process of extracting oil from olives (the pressing process) and making molasses from grapes. Then he touched on the locations of the spread of presses in Damascus and its countryside, and the fees that the Ottoman Sultanate charged on presses in general, and then mentioned the most important findings of the research. The aim of the research is to shed light on the most important food industries in Damascus and its countryside, as it gives a true example of this industry, which formed the backbone of the food of the population of the Levant in general, and not just in Damascus and its countryside. The research aims to reach a number of results, the most important of which is knowledge of the most important types of contemporary presses that were used in the process of modernization, the tools that these contemporary presses contained, and then the places in which they were spread.
